Pop-up restaurants, also known as ephemeral restaurants, are dinners with a very defined gastronomic thematic, led by professional cooks that are limited to a small number of tickets/seats. The purpose of these dinners can be different – so the people get know the chefs in an original way, to differentiate themselves from the rest of restaurants or to offer something exclusive. These are creative experiences with unique dishes that may not be offered again on the menu.
The idea was born in London and New York. Gingerline are the pioneers of this movement, who create diverse dinners in their spot on the East End. Another pioneer was Nuno Mendes (Ferran Adrià’s ex-apprentice) with The Loft Project – He organized dinners with his friends in his own flat where less experienced chefs cooked for them. These events are so exclusive that the chefs that will be cooking and the locations where they take place are not revealed until just a few hours before the event.
